STUFFED QUINOA PANCAKES




Servings: 3 filled pancakes.

Pancake Ingredients:

3.5oz of Quinoa Flour

8 1/2 oz of Low-Fat Milk (you can also use Almond Milk,Soy Milk,Coconut Milk)

2 Eggs

1 1/2 Tsp of Baking Powder


Filling Ingredients:

7oz of Fat-Free Feta Cheese

3oz of Fresh Spinach


Directions:

Whisk all pancake ingredients in a bowl.

Heat up pan over medium heat and pour 1/3 of the mixture in the pan.

Bake for a few minutes per side.

Distribute 1/3 of the raw spinach and 1/3 of the fat-free feta cheese on the pancakes.

Close the pancake and bake each side for a few minutes.
