This one of my favorite dishes to eat as well as serve to friends..and anyone can make it..

2 lbs fresh tomatoe, cut in to bit size
4 limes (can use less, but I like lime)
4-8 oz. of purple(red) onion finely chopped
2-4 fresh jalepeno finely chopped (REMOVE the seeds, unless you want your guests crying)
1 can black eye peas, drained
1 can chick peas, drained
1 can corn, drained
if you want, about 2 cloves of garlic minced can be added

Mix all ingredients in a large serving bowl...except for the limes...juice the limes over the bowl coating all the veggies in juice..stir it up...salt and pepper to taste and serve with some baked chips..or wheat thins or whatever you want to use and watch it disappear..This will server about 6 people as a snack

Normally I'd say I'm not sure on the peas 'however' it'll add some protein to it! Might have to try this.

The chick peas add about 10g of protein per serving..and I can eat a whole can..lol..you can leave them out...but I like 'em...let me know what you think when you make it..
