After meat has been marinating for a few hrs remove from refrig, Wrap loin in pepper bacon ( if you cant find regular smoked bacon will be fine). Can use tooth picks to hold on loin or just wrapp well. Wrapp loin in foil put loin on grill for about 8-10 min per side. Slice to desired thickness. Do not over cook or you will be eating cardboard.

I wish it was easier to get Deer meat!
Some of the best hot sticks and jerky I ever had came from Deer!

one of my favorites !!! only thing to make it better is jalopino peppers added between the meat. adds tremendous flavor on the grill !! as Buck said medium rare is almost to done for venison. a camp house favorite !!! :)

You can actually take the peppers out after you take it off of the grill and its not hot at all. It just adds a great flavor somehow but its not hot if you dont eat the peppers. I eat um though !!!

also cutting the shoulder meat into thin slices and marinating in italian is good you can make it almost like jerky. Im poor dont have a dehydrator.

Dehydrators are cheap these days! Of course, you can make jerky in the oven!

Never been big on the jerky myself. Think i may try that shoulder meat this winter. I usually get the whole deer ground except the tenderloin and the belly straps. May quater a doe up this year for some barbacue and roasts

Yeah it gets kinda pricy to. I like it more ground than in roasts the wife cant cook the roasts worth a sh*t always drys them out to much. So its easier to mak tacos, spagti, meatloaf and such for her.
